Central cooling
A refrigerated worktop keeps ingredients at a steady chill while the chef works directly above them. The saladette counter draws heat out of the storage space beneath the work surface and expels it at the rear, maintaining a cool zone that slows bacterial growth and preserves texture and colour in leafy greens, sliced vegetables and prepared salads. A compressor circulates refrigerant through concealed coils; the refrigerant absorbs heat from the interior and releases it outside, cycling continuously to hold the set temperature without freezing the contents.
The operator slides open the top compartment to arrange salad bowls or ingredient trays, then lowers the GN1/6 drawers below to store back-up stock. A digital control panel on the front edge sets the temperature between -5 °C and +8 °C; once the desired value is entered, the refrigeration system runs automatically. The work surface includes a built-in opening for waste or a container, keeping the prep area clear. Adjustable legs level the unit on uneven floors, and the raised top compartment lifts the work height to reduce bending.
The entire structure is built from stainless steel, chosen for its resistance to corrosion, ease of sanitising and compliance with food-safety regulations. The exterior panels, work surface and drawer fronts are brushed to reduce glare and hide minor scratches. The refrigeration system is housed in a sealed compartment at the base, accessible from the rear for servicing.
The 230 V, 2.8 A supply connects to a standard single-phase circuit, drawing 0.293 kW under normal operation. The 135 kg weight requires two people to move the unit; once in place, the adjustable legs bear the load without additional bracing. The 1720 mm length fits a standard worktop run, while the 700 mm depth leaves room for circulation behind the counter. The 330 L volume is divided into ten GN1/6 drawers, each holding a standard gastronorm tray for organised storage.
Cleaning follows a daily routine: the work surface and opening are wiped with a sanitising solution, the drawers are removed and washed separately, and the exterior panels are cleaned with a damp cloth. The refrigeration coils at the rear should be vacuumed monthly to remove dust that would reduce efficiency. The digital control panel is wiped with a soft, dry cloth to avoid moisture damage.
The P313 is supplied as a single unit with adjustable legs and a digital temperature controller. No additional variants are listed for this article.
