A thermostat regulates the temperature inside catering appliances by switching the heating element on or off at set points. In this type of control, a sensor immersed in the medium—water, oil or air—detects the current temperature and sends a signal to the switch. When the temperature falls below the lower limit, the element is energised; when it rises above the upper limit, the element is turned off. This cycling maintains the medium within the chosen range without manual adjustment, ensuring consistent cooking, holding or proofing conditions.
The operator fits the thermostat into the appliance's circuit, connects the sensor to the designated port, and sets the desired range using the adjustment dial or screw. Once installed, the control runs automatically: the user loads the appliance, starts the programme, and the thermostat governs the heating element until the target temperature is reached and held.
This S-P thermostat is constructed for direct mounting in catering equipment. The housing is sealed against moisture and grease, and the sensor lead is insulated for safe contact with hot media. A single adjustment screw sets the temperature span between 30 °C and 71 °C, covering gentle holding, proofing and light cooking processes.
The 30–71 °C range allows the appliance to maintain food at safe serving temperatures without overcooking or drying. A lower limit of 30 °C keeps sauces and soups above the danger zone, while the 71 °C upper limit is suitable for gentle simmering and proofing dough. The compact footprint fits into control panels without requiring additional space.
Cleaning is limited to wiping the housing with a damp cloth; the sensor and adjustment screw must remain dry to prevent calibration drift.
