A hot cabinet maintains prepared dishes at serving temperature without drying or overcooking. It circulates warm air evenly around gastronorm containers, using a heat dissipation fan to prevent hot spots. The fan draws air across a heating element, then distributes it through vents inside the cabinet. The gentle, consistent heat allows dishes to remain ready for service without further attention from kitchen staff.
The Casselin CCMTV features double-sided access. Each of its four drawers accommodates one GN1/1 container, 65 mm deep. The operator slides the drawer out, positions the container inside, and closes it. A digital control panel at the front allows temperature settings between 30 °C and 90 °C for the entire cabinet or individual drawers. A timer can be set for up to 100 hours, enabling overnight holding without manual oversight. Five on/off buttons—one for the whole unit and one per drawer—permit selective use if only part of the load is required.
Constructed entirely from stainless steel, the cabinet includes drawers that run on full-extension slides and can be removed for cleaning. A heat dissipation fan at the rear ensures even temperature distribution and minimises condensation on internal surfaces. The front panel features a digital display alongside the five push-button controls.
With a 3 kW power rating, the unit requires a dedicated circuit on a 230 V single-phase supply. The 78.5 kg weight indicates a floor-standing appliance. The dimensions of 627 mm wide by 521 mm deep allow it to fit standard worktop depths and facilitate side-by-side installation in a pass-through setup.
Cleaning involves removing the drawers and washing them in a sink or dishwasher. The interior and exterior stainless steel surfaces should be wiped with a damp cloth and mild detergent. The heat dissipation fan requires periodic checks for dust accumulation to maintain proper airflow.
The CCMTV includes four high-temperature GN1/1 containers, each 65 mm deep.
