A flat gasket of PTFE creates a pressure-tight seal between the portafilter and the group head of an espresso machine. When the portafilter is locked into place, the gasket compresses slightly, filling microscopic gaps that would otherwise let water bypass the coffee puck. This ensures the brewing water flows through the coffee grounds at the correct pressure, extracting flavour and crema without leaks or weak spots.

The operator fits the gasket into the groove on the group head, ensuring it lies flat and even. Once seated, the portafilter is inserted and rotated to lock; the gasket compresses under the pressure, forming the seal. Over time, the gasket hardens and loses its elasticity, leading to leaks and uneven extraction, so it is replaced as part of routine maintenance.

This gasket is made of PTFE, a material chosen for its resistance to heat, oils and coffee acids. It does not absorb flavours or degrade under the temperatures and pressures of espresso brewing, maintaining a consistent seal through repeated use.

Cleaning is straightforward: the gasket is removed from the group head, wiped with a damp cloth to remove coffee oils and residue, and inspected for wear. If it shows cracks, hardening or deformation, it is discarded and replaced to maintain the integrity of the seal.
