A flat gasket of polytetrafluoroethylene (PTFE) creates a tight, non-stick seal between two rigid surfaces in catering equipment. PTFE resists heat, steam and food acids without hardening or sticking, so the joint stays leak-proof through repeated heating and cooling cycles. The material does not absorb moisture or odours, which keeps the seal hygienic and prevents cross-contamination between cooking batches.

The gasket sits between flanges or mating faces of equipment such as combi-ovens, steamers, pressure cookers and jacketed kettles. Once the surfaces are aligned and the fixing bolts tightened, the PTFE compresses slightly to fill microscopic imperfections in the metal, blocking the escape of steam, water or cooking vapours. Because PTFE is chemically inert, it will not react with cleaning chemicals or food residues, so the seal remains intact even after frequent wash-downs.

To fit the gasket, the operator first switches off and isolates the appliance. The old gasket is peeled away, the mating faces are cleaned of any residue, and the new gasket is positioned so its inner and outer edges match the flange profile. Bolts are re-inserted and tightened evenly in a diagonal sequence to prevent distortion. No adhesive is required; the compression of the PTFE alone provides the seal.

The gasket is a single-piece ring of pure PTFE, 3 mm thick, with an outside diameter of 57 mm and an inside diameter of 43 mm. These dimensions determine which flanges it fits; the 3 mm thickness gives enough compression to seal without over-stressing the bolts.

Cleaning is limited to wiping the exposed surface with a damp cloth and a mild detergent. Abrasive pads or wire brushes must not be used, as they can scratch the PTFE and weaken the seal. The gasket is replaced when it becomes permanently flattened or shows signs of cracking.
