A mobile hot cabinet keeps plated dishes or bulk food at serving temperature without steam or condensation. Dry-heated air circulates inside a sealed, insulated chamber; a digital thermostat holds the set point while the operator moves the unit from kitchen to servery or onto a van. The absence of water or humidity prevents soggy pastry, limp vegetables and cross-flavouring, making the cabinet suitable for mixed menus and off-site catering where reheating is not an option.
The ROCAM THERMOVEGA 2 SH C10 is loaded through a single full-height door. Ten C-shaped inner guides accept either ten GN 2/1 gastronorm trays or twenty GN 1/1 trays, allowing the kitchen to switch between deep and shallow containers without reconfiguring the cabinet. A heating element mounted inside the chamber warms the air; the digital thermostat cycles the element to maintain the chosen temperature. A lighting switch on the control panel illuminates the interior so the operator can check contents without opening the door and losing heat.
To use the cabinet, the operator wheels it into position on four swivel castors, two of which lock to prevent rolling. The door is opened with a full-height push handle; trays are slid onto the guides. The door is closed, the thermostat set, and the unit switched on. Once the temperature is reached, the cabinet holds it until the operator switches off or moves the unit. A directional, reclosable blowhole can be fitted to vent excess heat or humidity if required.
The cabinet is constructed from AISI 304 stainless steel with double insulated walls. The door is sealed with a thermal gasket to retain heat and fitted with two full-height push handles for easy opening. Four non-marking bumpers protect walls and furniture from scuffs. The castors are 125 mm in diameter, allowing the unit to roll over thresholds and uneven floors.
Controls consist of a digital thermostat to set and monitor temperature, a lighting switch to illuminate the interior, and a main power switch. The 0.7 kW heating element draws a modest load on a 230 V single-phase circuit, suitable for standard kitchen outlets. The 57 kg weight allows one operator to move the cabinet when empty; when loaded, two operators or a trolley are recommended.
The 815 mm width, 898 mm depth and 1088 mm height fit through standard doorways and into small storage spaces. The footprint is compact enough for use in tight kitchens or on catering vans where space is limited.
Cleaning is carried out with a damp cloth and mild detergent. The stainless steel interior and exterior resist corrosion and staining; the thermal gasket should be checked regularly for wear and replaced if damaged. The castors should be kept free of debris to ensure smooth movement.
Optional extras include GN trays, a lock with key for security, stainless steel grids for additional shelf space, a UK-type G plug for compatibility with British outlets, and a directional, reclosable blowhole for ventilation control.
The THERMOVEGA 2 SH C10 is classified as a hot-cabinet in the ROCAM professional catering range.
