A paella pan spreads heat evenly across a wide, shallow surface so that rice, seafood or vegetables cook at the same rate without stirring. The broad area exposes more food to the heat source, allowing moisture to evaporate quickly and create the characteristic crisp base. A thick base resists warping and holds heat longer, smoothing out temperature fluctuations when ingredients are added or the pan is moved off the heat.
The pan is placed directly over a gas ring, solid-fuel burner or induction hob. Ingredients are added in stages: oil first, then sofrito, stock, rice and finally proteins or vegetables. The wide rim makes it easy to turn and distribute food with a spatula without spilling. Once the liquid has been absorbed, the pan is removed from the heat and left to rest before serving.
The pan is made from a single sheet of carbon steel with a 7 mm thick base. The material conducts heat rapidly and retains it, reducing the need for constant adjustment of the flame. The 500 mm diameter gives enough surface area for large batches while the 78 mm depth keeps the layer of rice shallow enough to cook evenly. The 7 kg weight keeps the pan stable on the hob and makes it easier to handle when full.
Cleaning is done by hand: after use the pan is wiped with a paper towel to remove excess oil, then washed with hot water and a soft brush. It is dried immediately and lightly oiled to prevent rust. Regular seasoning builds up a natural non-stick surface over time.
The pan is listed in the Neumarker catalogue under Professional Cookware, Speciality Pans.
