A neutral module forms the backbone of a professional buffet line, holding food at ambient temperature while keeping it accessible to diners. The ROCAM OMNIA 2N unit provides a stable, unheated surface for platters, bowls and gastronorm containers, letting the food's own warmth or chilled service do the work. Its role is to organise the flow of service without altering the temperature of the dishes, so that hot stays hot and cold stays cold until the moment it is served. The module itself is a sturdy stainless steel frame clad in panels that can be chosen for durability, hygiene or appearance, and it stands on adjustable feet that level the worktop even on uneven floors.
The operator loads the module by placing gastronorm trays or loose dishes directly onto the worktop. If the unit is fitted with a sneeze-guard or display glass, the food is visible while protected from airborne particles. When the module is part of a self-service island, removable tray slides or dish holders guide diners along the line, preventing spills and speeding up service. For assisted service, a closed glass front keeps the food at eye level while the server reaches through an opening. The lower compartment, if specified, stores spare trays, cutlery or napkins within arm's reach, reducing trips to the storeroom during service.
The frame is stainless steel throughout, while the panels can be laminated wood, stainless steel, powder-coated steel or over-panelled in laminated wood. Adjustable feet raise the unit to a comfortable working height and can be hidden behind a plinth skirt. Optional castors turn the module into a mobile unit, letting the kitchen team reconfigure the buffet layout between services or move the unit for cleaning.
Controls are minimal: the feet are adjusted with a spanner, and any lighting or heating options are switched on at the mains. The LED or halogen fittings, if chosen, illuminate the food without adding heat, while the glass displays keep the presentation crisp and professional.
A capacity of two GN1/1 containers means the module can hold two full-size gastronorm trays side by side, or a mix of smaller trays and loose dishes. The external dimensions of 846 mm wide, 747 mm deep and 910 mm high fit into standard buffet lines and leave room for staff to work behind the unit. The lower compartment, when specified, measures 608 mm wide and 452 mm high, large enough for bulk storage but shallow enough to keep items within easy reach. A weight of 60 kg makes the module stable on its feet or castors, yet light enough for two people to move without a trolley.
Cleaning follows from the materials: stainless steel surfaces wipe down with a damp cloth and sanitiser, while laminated wood panels are sealed against moisture and can be cleaned with a mild detergent. Glass displays are removed for thorough cleaning, and any removable tray slides or dish holders are taken out and washed separately. The adjustable feet and plinth skirt prevent dirt from collecting underneath, and the castors, if fitted, allow the unit to be rolled away from the wall for a full clean behind and beneath.
The OMNIA 2N is available in a range of finishes and colours, letting the unit blend with the kitchen's decor or stand out as a branded display. Optional extras include LED or halogen lighting, tempered glass sneeze-guards in straight or inclined styles, closed glass displays for assisted service, and stainless steel or laminated wood dish holders and tray slides. The lower compartment can be fitted with doors, drawers or left open, and castors or adjustable feet can be chosen to suit the floor surface. Custom adhesive stickers allow the unit to carry branding or service instructions.
The module is designed to link with other OMNIA elements, forming a continuous buffet line that can be expanded or reconfigured as the menu changes. Its neutral temperature makes it compatible with both hot and cold modules, so it can sit between a bain-marie and a refrigerated display without disrupting the flow of service.
