A left-hand scraper keeps the freezing cylinder of a professional ice-cream machine clear of frozen product. As the dasher rotates, the scraper blade presses against the cylinder wall, lifting the layer of ice cream that forms and folding it back into the mix. This constant renewal of the surface prevents a solid crust from building up and ensures the mix churns evenly, giving a smooth, creamy texture without ice crystals.

The operator installs the scraper before the machine is switched on. Once the mix is loaded and the programme started, the scraper works continuously, requiring no further adjustment. When the batch is finished, the scraper is removed for cleaning and inspection.

The blade is shaped to match the curvature of the cylinder on the specified LF ice-cream machines. It is positioned on the left side of the dasher, facing the operator when the machine door is open.
