| NOTES | 10 Lava rocks |
A lava rock grill uses natural volcanic stones that are heated by a gas burner. The stones retain and evenly distribute heat, similar to charcoal. This simulates the operation of an open flame grill. The lava rock grill provides a more authentic grilling flavor, as the stones mimic the heat of coals. When fat drips onto the hot stones, a light smoke is produced, giving the food a smoky, aromatic taste—similar to traditional outdoor grilling.
The CASTA E7/BS2BA is a lavastone ribbed gas grill, designed for professional catering use.
The operating principle of a gas lava stone grill involves gas burners heating lava rocks placed beneath a ribbed grilling surface. The intense heat from the rocks is radiated upwards, cooking food placed on the grate. The V-shaped stainless steel grate channels fats and juices away from the food and into a grease runner, which then directs them to a removable collection drawer. This method imparts a distinctive grilled flavour and appearance.
Operation begins with the piezoelectric ignition of the gas burners. Temperature is regulated using control knobs, with settings ranging from minimum to maximum. The grill grate, shaped in a V from stainless steel, is used for general grilling. A specific steel grate for grilling fish can be supplied on request. The unit features a grease runner with a drainage hole and a removable fat collection drawer for easy cleaning. The grill is equipped with gas burners featuring two flame tubes, a gas safety tap, and a thermocouple for enhanced safety.
Construction features a stainless steel surface with a rounded top edge, made from AISI 304 material. The V-shaped grill grate is also stainless steel. The adjustable legs are constructed from AISI 304 18/10 stainless steel. The control knobs are made of heat-resistant material. The unit is certified to European Union CE safety and quality standards and includes 10 lava rocks.
The power rating of 16 kW indicates the maximum rate of energy consumption from the gas supply. The dimensions are 800 mm in width, 700 mm in depth, and 850 mm in height, defining the unit's footprint and the space it will occupy in a kitchen layout. The adjustable legs allow for levelling the unit on uneven surfaces.
Cleaning involves emptying the removable fat collection drawer and wiping down the stainless steel surfaces. The grease runner should also be cleaned regularly.
