A drop-in bain marie heating well keeps prepared dishes at serving temperature without drying or overcooking. The well holds a water bath heated by silicone adhesive elements bonded to its underside. Heat spreads evenly through the water, transferring gentle warmth to the gastronorm containers above. A digital thermostat regulates the temperature, maintaining the set point within a degree. This method preserves moisture, texture and flavour better than direct heat, making it essential for buffets, assisted service and hot-holding stations.
The operator fills the well through an integrated water system with an overflow pipe that prevents spillage. Once the water level is correct, the unit is switched on and the thermostat set to the desired temperature between 0 and 90 °C. Gastronorm containers of 1/1 size are placed on the removable display grid inside the well. The water bath heats the containers from below, while optional LED or halogen lighting illuminates the dishes from above. A drain cock at the front allows quick water changes during service.
The structure is built from stainless steel, with a well depth of 260 mm and external dimensions of 1821 mm by 747 mm by 370 mm. The well accommodates five GN 1/1 containers side by side. Optional tempered glass sneeze-guards or closed displays can be added to protect food from airborne contamination and improve presentation.
Controls consist of a digital thermostat that sets and displays the water temperature. The power requirement of 2.5 kW indicates the load on the electrical circuit; with optional LED or halogen lighting, this figure increases. The unit operates on a 230 V single-phase supply, the standard voltage for most professional kitchen circuits in the UK.
The 0–90 °C temperature range allows the well to hold chilled items at the lower end and hot dishes at the upper end, covering most holding and display needs. The external dimensions determine the space required on the worktop or counter, while the well dimensions dictate the size of containers that fit inside. The removable display grid simplifies loading and unloading, and the water drain kit with cam valve speeds up cleaning between services.
Cleaning involves draining the water, removing the grid, and wiping down the stainless steel surfaces. The silicone heating elements require no maintenance beyond occasional inspection for scale or damage. Optional accessories such as LED lighting or sneeze-guards may need separate cleaning routines, depending on the materials used.
Variants include stainless steel structures with LED lighting, halogen heating lamps, or a combination of both. Additional options cover straight or inclined tempered glass sneeze-guards, closed glass displays for assisted service, and a 60 Hz compressor for specific electrical requirements. A UK plug supplement is available for British installations.
The product is categorised under bain marie heating equipment, specifically designed for drop-in installation in counters or buffet stations.
