A drop-in heating well keeps prepared dishes at serving temperature without moisture, using dry heat that preserves texture and flavour. The ROCAM 006INDROP3DRY generates warmth through a high-efficiency armoured element positioned beneath the well. Air circulates naturally around the element, creating an even, gentle heat that surrounds the food containers without steaming or drying them out. This static heating method avoids the fluctuations of fan-assisted systems, making it particularly suited to delicate items such as pastries, roasted meats and sauces that must stay crisp or glossy over extended service periods.
To operate, the unit is installed into a cut-out in the worktop, leaving only the rim and control panel exposed. The operator sets the desired temperature on the digital thermostat, which maintains the heat within the 0 to 90 °C range. GN containers or gastronorm pans up to 150 mm deep are placed directly into the well, resting on side supports and dividers that keep them stable and organised. A drain tap at the base allows condensate and cleaning water to be removed without lifting the unit, simplifying daily upkeep.
The construction is a stainless steel structure that forms the outer body and well. The well itself measures 1016 mm by 592 mm by 260 mm deep, providing space for three GN1/1 containers side by side. The external footprint is 1171 mm wide, 747 mm deep and 370 mm high, fitting standard worktop cut-outs. The unit weighs 30 kg, allowing two people to position it safely during installation.
Controls consist of a digital thermostat that sets and displays the target temperature. The 1.5 kW power rating corresponds to a single-phase 230 V supply, the standard circuit found in most professional kitchens. Optional upgrades include LED lighting for visibility, halogen heating lamps for additional radiant warmth, tempered glass sneeze-guards in straight or inclined configurations, and a closed glass display for assisted service. A removable grid, water drain kit and UK plug supplement can also be specified at order.
The 0 to 90 °C temperature range covers holding, proofing and gentle reheating, but excludes boiling or rapid cooking. The 30 kg weight means the unit is moved by trolley or two-person lift rather than carried by one person. The 1171 mm width requires a dedicated section of worktop, while the 747 mm depth allows it to sit flush against a back wall without overhang.
Cleaning involves wiping the stainless steel surfaces daily and using the drain tap to empty the well after service. The dividers and side supports lift out for thorough washing, and the optional water drain kit further streamlines the process by channelling water directly to a waste outlet.
