3 GN 1/1
A drop-in bain marie heating well keeps prepared dishes at serving temperature without drying or overcooking. The well holds water, heated by silicone adhesive elements along its sides. Heat transfers evenly through the water, warming the GN containers above it. This indirect method prevents hot spots, so sauces, soups and sides stay at a steady temperature for hours. The water bath also adds humidity, which stops food from losing moisture and keeps textures intact.
To use the unit, position it in a cut-out on the worktop and connect the water filling system to a tap. Fill the well until water reaches the overflow pipe, then switch on the power. The digital thermostat lets the operator set the temperature between 0 °C and 90 °C. Once the target is reached, the thermostat cycles the elements to maintain it. Place up to three GN 1/1 containers in the well; the water level should cover the base of the containers but not touch the food. A drain cock at the front allows quick emptying after service.
The structure is stainless steel, chosen for corrosion resistance and ease of cleaning. The well itself is also stainless steel, with silicone adhesive heating elements bonded to its outer surface. A digital control panel on the front edge sets the temperature; the display shows the current reading. The standard unit includes a water filling system with an overflow pipe to prevent overfilling.
The power rating of 1.5 kW indicates the load on the electrical circuit; the unit runs on a single-phase 230 V supply, typical for a professional kitchen. The weight of 30 kg allows two people to lift it into place without a hoist. External dimensions of 1171 mm wide, 747 mm deep and 370 mm high fit a standard worktop cut-out, while the well measures 1016 mm by 592 mm by 260 mm deep, giving a capacity of three GN 1/1 gastronorm containers.
Cleaning involves draining the well, wiping the interior with a mild detergent, and rinsing. The stainless steel surfaces resist staining and can be sanitised daily. The silicone elements require no maintenance beyond keeping them free of scale. Optional accessories include LED or halogen lighting for display, tempered glass sneeze-guards in straight or inclined profiles, and a water drain kit with a cam valve for faster emptying.
Variants allow customisation: LED lighting, halogen heating lamps, or a combination of both. Sneeze-guards come in one-sided or closed-display versions, and a removable grid is available for assisted service. A UK plug supplement is offered for British installations.
The unit is listed in the catalogue under drop-in bain maries, heated wells and counter-top holding equipment.
