2 GN 1/1
A drop-in dry heating well keeps plated dishes or bulk containers at serving temperature without moisture, using static air warmed by an armoured heating element. The method avoids steam that can soften pastries or dilute sauces, while the even heat distribution prevents cold spots that risk food safety. The well sits flush in a worktop, leaving the counter clear for plating and service.
The operator sets the digital thermostat to the required holding temperature between 0 and 90 °C, then loads the well with up to two GN1/1 gastronorm containers or individual plates on the removable grid. Side supports keep pans stable, and two dividers allow separate temperature zones if needed. A drain tap at the base lets water run off during cleaning without lifting the unit.
The unit is built as a stainless-steel structure with a 691 mm by 592 mm well that accepts containers up to 150 mm deep. External dimensions of 846 mm by 747 mm by 370 mm allow it to drop into a standard worktop cut-out, and the 26 kg weight means it can be moved by two staff without a trolley. A 1 kW heating element draws power from a 230 V single-phase circuit, typical of professional kitchen supplies.
The base power rating of 1 kW rises if optional LED or halogen lighting is added, increasing the load on the circuit. The temperature range of 0 to 90 °C covers hot holding, proofing and low-temperature cooking, but does not reach frying or baking temperatures. The 260 mm well depth limits the height of containers, while the 26 kg weight requires a sturdy worktop and may need reinforcement in mobile or lightweight counters.
Cleaning involves removing the grid and dividers, wiping the stainless-steel surfaces, and flushing the well through the drain tap. The tap itself unscrews for descaling if limescale builds up. Optional sneeze-guards or closed glass displays protect food during service but add weight and require regular glass cleaning.
Variants include LED lighting, halogen heating lamps, tempered-glass sneeze-guards in straight or inclined profiles, and closed glass displays for assisted service. Additional options cover a 60 Hz compressor, spacers for GN tanks, GN containers, a water drain kit with cam lock, and a UK plug supplement.
The unit is listed in the catalogue under drop-in hot holding and dry heating equipment for professional catering kitchens.
