A warming drawer keeps plated dishes, pre-cooked components or held-over food at serving temperature without further cooking. It circulates warm air around the load, maintaining an even heat across every container. A built-in fan draws air over a heating element and distributes it through vents in the cabinet, so the top shelf and the bottom shelf reach the same temperature. Humidity is added by evaporating water from a reservoir, preventing the food from drying out during the holding period.
The operator slides three GN 1/1 containers into the drawer, each 100 mm deep. The thermostat is set between 40 °C and 80 °C; the chosen temperature is reached quickly and held steady. A water tank at the rear is filled to introduce moisture into the air stream. Once the drawer is closed, the fan and heater cycle automatically to maintain the set point until the food is needed.
The cabinet is fabricated from stainless steel, inside and out. Three removable GN 1/1 containers of 100 mm depth are supplied. A water tank for humidification is integrated at the rear of the unit.
Controls consist of a rotary thermostat that adjusts the air temperature from 40 °C to 80 °C. A separate switch or indicator for the humidification system is not specified.
The 2.2 kW power rating indicates the load the unit places on the electrical circuit. A 230 V supply is required, matching the standard single-phase outlets found in professional kitchens. The 62 kg weight means the drawer is moved on a trolley or with two people. The footprint of 467 mm depth, 662 mm width and 595 mm height determines the space it occupies on the worktop or under a counter.
Cleaning involves removing the GN containers and washing them separately. The interior and exterior stainless steel surfaces are wiped down with a damp cloth and a mild detergent. The water tank is emptied, rinsed and refilled daily to prevent mineral build-up.
The CTC3 is a single model; no variants are listed.
The product is catalogued under warming and holding equipment for professional kitchens.
