Technical Data Sheet

A mobile rack designed to hold and transport gastronorm trays between kitchen stations without removing the trays themselves. The trolley moves on swivel castors, allowing staff to wheel it through doorways and around tight corners while the trays remain securely in place. Its primary use is to keep prepared food, ingredients or clean trays organised and within reach during service, reducing the need to lift trays individually and speeding up workflow in a professional kitchen.

The trolley's frame is built with horizontal C-shaped guides that match the rim of standard gastronorm trays. These guides prevent the trays from sliding sideways or tipping when the trolley is in motion, even if the unit is stopped abruptly. Because the guides are open at the front, trays can be loaded and unloaded quickly by sliding them in and out, rather than having to lift them over a lip or rail. This design also allows the same trolley to be used for different tray depths, as long as the tray width conforms to the gastronorm standard.

To use the trolley, staff slide up to sixteen GN1/1 trays into the guides, eight on each side. The trays rest directly on the guides, so no additional shelves or supports are needed. Once loaded, the trolley can be wheeled to the required station—whether that is the pass, the cold prep area or the plating line. The four swivel castors allow the trolley to be moved in any direction without having to turn it, which is particularly useful in confined spaces. When the trolley is stationary, the optional brake kit on two of the castors can be engaged to prevent it from rolling away.

The entire structure is made from AISI 304 stainless steel, chosen for its resistance to corrosion and ease of cleaning in a kitchen environment. The frame is welded for strength and finished with a smooth surface that minimises the risk of food debris or grease becoming trapped. Four non-marking bumpers are fitted to the corners to protect walls and door frames from damage when the trolley is manoeuvred through tight spaces.

Controls are limited to the optional brake levers on two of the castors. These levers are foot-operated, allowing staff to lock the trolley in place without having to bend down or use their hands, which may be holding trays or utensils.

The stated capacity of sixteen GN1/1 trays means the trolley can hold the equivalent of two full gastronorm racks, reducing the number of trips needed between storage and service areas. The overall dimensions of 607 mm wide, 812 mm long and 894 mm high allow the trolley to fit through standard kitchen doorways and alongside worktops without obstructing walkways. The 24 kg weight indicates that the trolley can be moved by a single person when empty, while still being stable enough to remain in place when fully loaded.

Cleaning is straightforward: the stainless steel surfaces can be wiped down with a damp cloth and standard kitchen sanitiser. The open frame design means there are no enclosed spaces where dirt or moisture can accumulate, and the absence of shelves or drawers eliminates areas that would otherwise require disassembly for thorough cleaning. The castors can be removed for separate cleaning if needed, although this is not typically required during daily maintenance.

An optional modification allows two of the four castors to be fitted with a brake kit, providing additional stability when the trolley is stationary. This option is selected at the time of ordering and incurs an additional cost.

The trolley is categorised as a mobile storage solution for gastronorm trays and is typically found in the kitchen storage and transport section of professional catering equipment catalogues.
