A mobile holding station designed to keep batches of French fries at serving temperature without losing texture. The unit uses three Philips heating bulbs positioned above a two-row wire grid. Radiant heat from the bulbs maintains surface crispness while an adjustable thermostat cycles the bulbs to hold the interior temperature between 50 °C and 90 °C. The same principle applies to the built-in sauce heater, which is controlled by its own thermostat within the same range.
To operate, the operator loads freshly cooked fries onto the grid, sets the desired temperature on the main thermostat, and switches the unit on. The sauce heater is filled, its thermostat adjusted, and its separate on/off button pressed. An interchangeable glass window can be fitted to either side, allowing the station to be positioned against a wall or left open for service. Two salt shakers are stored on the unit, and a removable grease trap collects any drips from the fries.
The entire structure is built from stainless steel, including the two-row grid, the storage cupboard beneath, and the sauce-heater well. A single on/off button controls the main heating bulbs, while the sauce heater has its own dedicated button. Three adjustable thermostats—one for the main chamber and two for the sauce wells—allow independent temperature control for each section.
The 1.95 kW power rating indicates the load the unit draws from a standard 230 V single-phase circuit, suitable for most professional kitchen ring mains. The 600 mm width and 725 mm depth fit within a typical worktop footprint, while the 1600 mm height allows the operator to load and unload without bending. At 70 kg, the trolley can be moved by one person using the integrated handles, yet remains stable during service.
Cleaning involves removing the grease trap and washing it separately, wiping down the stainless-steel surfaces, and emptying the sauce heater. The two-row grid lifts out for thorough cleaning, and the interchangeable window can be taken off and washed in a sink. The storage cupboard provides space for cleaning supplies or spare salt shakers.
The trolley is supplied with two salt shakers and a set of three Philips heating bulbs. The left- or right-hand window configuration is chosen at installation and can be reversed if the service layout changes.
