2 GN 1/1
A carving station that keeps plated food at serving temperature without drying or overcooking uses focused infrared heat from two lamps above a stainless-steel warming plate. The lamps emit radiant energy that warms the surface of the food directly, while the plate beneath holds a gentle background heat. This dual-source system prevents the cold spots and steam build-up that come from convection alone, so roasts, joints and carved meats stay moist and ready to serve for extended service periods.
The operator places the plated food on the GN 2/1 size warming plate, sets the mechanical thermostat between +30 °C and +90 °C, and switches on the infrared lamps. A separate switch controls the lamps, allowing the plate to be used alone for lower-temperature holding. The acrylic sneezeguard with a central service opening keeps the food visible while shielding it from airborne particles, and the opening speeds the transfer of plates to customers without removing the guard.
The unit is built in AISI 304 stainless steel with chromed accents and a classic-design lampshade. The warming plate can be ordered with alternative porcelain-stoneware surfaces in either lava or oxide finish, and the infrared lamps are available in red as well as the standard white. Each lamp is independently replaceable, and the unit ships with a standard continental plug that can be exchanged for a UK plug on request.
A power rating of 1.25 kW indicates the load on a single-phase 230 V circuit, which is typical for a dedicated carving-station socket in a professional kitchen. The 25 kg weight allows the unit to be moved by two staff members or on a service trolley, and the 660 mm width fits a standard GN 2/1 tray, matching the footprint of most carving boards and hot-holding counters.
Cleaning follows from the materials: the stainless-steel surfaces and acrylic sneezeguard wipe down with a damp cloth and mild detergent, while the porcelain-stoneware plate options can be lifted out for deeper cleaning. The infrared lamps and their shades are removed for separate cleaning to avoid thermal shock.
Variants include alternative plate surfaces (lava or oxide porcelain stoneware) and red infrared lamps. Optional GN 1/1 size porcelain-stoneware covers are available for the warming plate when the station is not in use.
