This heated station maintains plated dishes at serving temperature without drying or overcooking. Two infrared lamps positioned above the work surface emit gentle heat downward, while a bain-marie beneath holds water at a controlled temperature. The setup ensures even warming of plates and food, preventing condensation and preserving texture. The infrared lamps react instantly, allowing the station to reach and maintain the selected temperature quickly, even when the lid is opened for plating tasks.
The unit features two perforated trays with spikes to hold plates upright on the worktop. Below, a GN 1/3 container filled with water sits in the bain-marie well. An On/Off switch activates the station, and a temperature control provides eight levels up to 75 °C. Once set, the lamps and bain-marie work together, warming plates from above and below. A transparent lid retains heat while enabling staff to view the dishes inside.
Constructed entirely from stainless steel, the station includes a worktop, frame, and container. Two infrared lamps are mounted in the canopy, and the perforated trays rest on rails above the bain-marie. The controls consist of an On/Off switch and a rotary knob for temperature adjustment.
With a power rating of 1.8 kW, the station operates on a standard voltage of 230 V. The unit weighs 18 kg, making it manageable for one person to move using the side handles. Its dimensions—970 mm wide, 445 mm deep, and 862 mm high—allow it to fit on a standard worktop or counter while keeping the lamps at a convenient height for loading.
Maintenance involves wiping the stainless steel surfaces with a damp cloth and mild detergent. The perforated trays and GN 1/3 container with lid can be removed for separate washing. Regular dusting of the infrared lamps ensures efficiency, and daily water changes in the bain-marie prevent scale accumulation.
The station is delivered as a complete unit, including two perforated trays and one GN 1/3 container with lid.
