A warming marmite keeps prepared dishes at serving temperature without further cooking. This Casselin unit uses an infrared heating element positioned above the food. Infrared radiation travels in straight lines, warming the surface of the dish directly rather than heating the surrounding air first. The result is even heat distribution across the tray, preventing hot spots and drying out while maintaining the texture and appearance of the food beneath the lamp.
The operator slides a GN 1/1 tray into the stainless steel housing, positioning it on the removable perforated plate. The handles on the tray allow safe insertion and removal even when the contents are hot. Once the tray is in place, the On/Off button starts the infrared element. The lamp remains on until the button is pressed again, holding the dish at a consistent temperature ready for service. No timer or temperature adjustment is provided; the unit is designed for holding rather than cooking.
The construction is stainless steel throughout, chosen for its resistance to corrosion and ease of cleaning in a professional kitchen. The GN 1/1 tray is 150 mm deep, matching the standard gastronorm size used across catering equipment. A perforated plate beneath the tray allows any condensation to drain away, keeping the base of the dish from sitting in liquid.
The 1.2 kW power rating draws a modest load from a standard 230 V single-phase circuit, suitable for most kitchen ring mains. The dimensions of 335 mm wide, 563 mm deep and 660 mm high place the unit on a worktop or counter, taking the space of a single gastronorm tray. At 9 kg, the marmite can be moved by one person between service stations or stored when not in use.
After service, the GN 1/1 tray and perforated plate lift out for cleaning. The stainless steel interior and exterior surfaces wipe down with a damp cloth; no detergents stronger than those used on food contact surfaces are required. The infrared element itself has no moving parts and needs no maintenance beyond occasional dusting with a dry cloth to ensure maximum heat transfer.
The unit is supplied as a single model, article CCF3, designed to hold GN 1/1 trays only. It is placed in the Casselin catalogue under warming and holding equipment, alongside heated pass-through counters and bain-maries.
