A warming marmite keeps prepared sauces, soups and stews at serving temperature without scorching or drying them out. Instead of direct flame or exposed metal elements, a ceramic heating plate radiates steady, even heat through the base of the vat. The ceramic material absorbs and distributes thermal energy gradually, so hot spots are eliminated and the contents stay smooth and glossy for hours.
The operator fills the marmite with the prepared liquid, places the lid on top, and sets the thermostat to the desired holding temperature. Once the ceramic element reaches that point, it cycles on and off to maintain it. A drain tap at the base allows quick, controlled emptying without lifting the heavy vat.
The vat is formed from stainless steel AISI 310, a grade chosen for its resistance to high temperatures and corrosion. The ceramic heating element is embedded beneath the base, sealed against moisture and food spills. A single control knob adjusts the temperature setting, while an indicator light shows when the element is active.
The 1.2 kW power rating draws a modest load on a standard 230 V circuit, suitable for most professional kitchens without requiring dedicated wiring. The GN 1/1 capacity and 150 mm depth provide ample volume for bulk holding while keeping the footprint compact at 330 mm front-to-back and 540 mm side-to-side. The 15.5 kg weight allows the unit to be moved with a trolley or two-person lift, yet it remains stable on a worktop or counter.
Cleaning involves draining the vat through the tap, wiping the interior with a soft cloth and mild detergent, then rinsing and drying. The ceramic element requires no maintenance beyond keeping the base free of debris. The exterior stainless steel can be polished with a non-abrasive cleaner to maintain its finish.
The marmite is listed in the Casselin professional catering catalogue under warming and holding equipment.
