A filter holder gasket creates the seal between the portafilter and the group head of an espresso machine. Without this seal, hot pressurised water would leak around the edges instead of being forced through the coffee puck, so the gasket maintains consistent pressure and prevents grounds from escaping into the cup.

The operator places the gasket into the circular groove of the portafilter or group head. When the portafilter is locked in place, the gasket compresses slightly, filling any microscopic gaps. Over time the material hardens and loses its elasticity, so the gasket must be replaced to keep the seal tight and the extraction even.
