An electric stove built for continuous service in professional kitchens, the MBM MAGISTRA PLUS 900 combines fast-heating cast iron hot plates with a sturdy stand. Electric elements beneath each plate convert current directly into heat, raising the surface temperature quickly and evenly. The cast iron retains and spreads the heat, giving a consistent cooking zone without cold spots. Overheat protection cuts power if the plate exceeds a safe temperature, preventing damage and fire risk while the indicator lights show which plates are active at any moment.
The operator loads pans directly onto the plates, adjusting heat with the controls for each zone. Fast-heating plates reach working temperature in minutes, while the lowered plates offer gentler heat for simmering or holding. The watertight seal between plate and worktop keeps liquids from reaching the elements, simplifying cleaning and reducing electrical hazards. Once cooking is complete, the plates cool gradually, allowing safe shutdown and maintenance.
The stove stands on a welded frame that supports the 1 mm AISI 18/10 stainless steel worktop. Four cast iron hot plates are arranged in two rows: two squared 300x300 mm plates rated at 3 kW and 4 kW, and two lowered 300x300 mm plates rated at 2.5 kW each. The worktop overhangs the frame, allowing side-by-side alignment with other MAGISTRA PLUS modules to form a continuous cooking line.
A 10 kW power rating indicates a substantial load on the electrical supply, requiring a dedicated three-phase 400 V circuit with neutral and earth. The 800 mm depth and 900 mm width set the footprint on the kitchen floor, while the 850 mm height positions the worktop at a standard working level. The 107 kg weight means the unit is moved with a trolley or pallet jack and is not easily shifted by hand once in place.
Cleaning involves wiping the stainless steel worktop and removing any food debris from the hot plates after they have cooled. The watertight seal prevents liquids from seeping beneath the plates, so the worktop can be washed with standard kitchen cleaners without risk to the electrical components. The cast iron plates require occasional seasoning to maintain their non-stick properties and prevent rust.
The MAGISTRA PLUS 900 is part of a modular range, allowing side-by-side installation with compatible MBM units to create a custom cooking suite.
