Electric stove with 6 x 2,6 kW burners and open stand
An electric stove designed for high-output professional kitchens, the MBM MAGISTRA PLUS 700 delivers consistent heat across its cast iron hot plates. Electric elements beneath each plate convert electrical energy into radiant heat, warming the surface evenly and rapidly. The thermostat regulates the current to the elements, cycling power on and off to maintain the selected temperature setting. This method avoids open flames and allows fine control over cooking intensity, essential for tasks from gentle simmering to rapid boiling.
To operate, the chef selects a power level on the 6-position thermostat for each hot plate, with an additional standby setting. Indicator lights confirm when a plate is active. Food is placed directly on the 300 mm square cast iron surface, which retains and distributes heat steadily. The watertight seal between the plates and the worktop prevents liquids from seeping beneath, while the raised rim around the edge catches spills and channels them away from the cooking area.
The stove is built on a pressed stainless steel worktop in AISI 304 grade, 1 mm thick, with rounded corners for safety and ease of cleaning. Each hot plate is cast iron, fixed securely to the worktop to eliminate movement during use. The entire unit runs on a 400 V three-phase supply, drawing 15.6 kW to power all plates simultaneously at full capacity. This load requires a dedicated circuit capable of handling the current without tripping breakers, typical for commercial kitchen installations.
Controls consist of individual thermostats for each hot plate, offering six heat settings plus an off position. The settings allow the chef to match the heat output to the cooking method, from low for delicate sauces to high for searing. The 1100 mm width provides space for multiple dishes to be cooked at once, while the 714 mm depth fits standard worktop depths in professional kitchens. At 136 kg, the stove is heavy enough to remain stable during use but may require two people or a trolley for positioning.
Cleaning involves wiping the stainless steel worktop and cast iron plates after each service. The watertight construction allows the surface to be washed down without risk of water ingress, while the raised rim simplifies the removal of spilt liquids. The cast iron plates should be seasoned periodically to maintain their non-stick properties and prevent corrosion. No disassembly is required for routine cleaning, as all components are fixed in place.
The MAGISTRA PLUS 700 is a single model with no variants, designed for integration into commercial kitchen worktops where high power and precise temperature control are required.
