Machine for making different types of dough, especially suitable for high-hydration dough up to 90%
A spiral dough kneader mixes flour, water and yeast by driving a spiral-shaped hook through the mass at a steady speed. The hook's curved shape lifts and folds the dough continuously, stretching the gluten strands without tearing them. This method develops the gluten network evenly, giving bread and pizza dough the elasticity and gas retention needed for a light, open crumb. The process is slower than a planetary mixer, but the gentler action keeps the dough cooler, which is essential for long fermentation programmes and artisan recipes that rely on controlled yeast activity.
The operator loads the ingredients into the removable stainless-steel bowl, lowers the smoked polycarbonate lid to engage the safety microswitch, and selects the mixing time on the mechanical control panel. Once the cycle starts, the spiral hook rotates while the bowl remains stationary, pulling the dough inward and upward along the hook's curves. The liftable head allows the bowl to be removed for scaling or bulk fermentation. After mixing, the dough splitter rod helps portion the mass without manual handling.
The kneader base is coated with scratch-proof paint to resist knocks from trolleys and trays. The bowl, spiral hook and dough splitter rod are all made of stainless steel for hygiene and durability. A mechanical control panel sets the mixing duration, and the safety microswitch on the lid prevents the machine from running unless the lid is closed.
A 2.4 kW motor drives the spiral at a fixed speed, drawing 220-240 V single-phase power. The 65 kg weight keeps the unit stable on the worktop during operation, while the 632 mm width and 320 mm depth fit between standard bakery work surfaces. The 750 mm minimum height rises to 932 mm when the head is lifted, so the space above must allow clearance for the lid to open fully.
Cleaning involves removing the bowl and washing it separately. The stainless-steel spiral and dough splitter rod lift out for scrubbing, and the smoked polycarbonate lid can be wiped down without abrasives. The scratch-proof base requires only a damp cloth to remove flour dust.
The HYD12SRM is listed in the FORCAR bakery equipment catalogue under spiral mixers for medium-volume production.
