A deck heating element generates the radiant heat that bakes bread, roasts meats and crisps pastries in a professional convection oven. Unlike fan-assisted models that circulate hot air, a deck element sits directly beneath the baking chamber and transfers heat by conduction and infrared radiation. This method creates a steady, even base temperature across the entire deck, essential for consistent browning and crust formation on large batches of baked goods.

The operator installs the element by sliding its flange into the oven's deck slot and securing it with the retaining clips. Once wired to the 230 V supply, the element draws 1.5 kW to raise the deck temperature to the set point. During operation, the element cycles on and off to maintain the chosen heat level, ensuring the deck remains at a constant temperature throughout the bake cycle.

Constructed from a coiled resistance wire encased in a stainless-steel sheath, the element measures 320 mm in length and 300 mm in width. The 70 × 22 mm flange aligns with the oven's deck aperture, providing a secure fit and efficient heat transfer.

The 230 V rating matches the standard single-phase supply used in commercial kitchens, allowing the element to be connected to a dedicated circuit without additional transformers or adapters. The 1.5 kW power draw indicates the load the element places on the electrical system, requiring a circuit capable of handling the current without tripping.

Cleaning involves disconnecting the element from the power supply and allowing it to cool completely. The stainless-steel sheath can be wiped with a damp cloth to remove surface debris, while the flange should be checked for corrosion or warping to ensure a tight seal in the deck slot.

This element is a direct replacement for GARBIN convection ovens, specifically models 23 MX, 23 MX UNI, 43 MX, 43 MX UMI and 84 LIM. It is listed in the catalogue under oven spares and heating components.
