A convection oven circulates hot air continuously around the food, cutting cooking time and giving the same colour and crispness to every tray. The TURBO QUARTZ unit uses a fan to draw air across a heating element, then forces it through ducts inside the chamber so heat reaches every shelf at once. This method eliminates cold spots and lets several trays cook together without rotating.

Load the oven with sheet pans or gastronorm trays, close the door and set the temperature up to 250 °C. The fan starts automatically, distributing heat evenly from the moment the element glows. A single control dial adjusts the temperature; a pilot light shows when the oven is heating. Once the set point is reached, the oven holds it until the timer or manual switch turns the element off.

The 38 litre chamber is built from stainless steel, with a single glass door that seals against a gasket. The exterior is also stainless steel, finished to a brushed satin surface that resists fingerprints. Four adjustable feet level the unit on uneven floors, and two side handles allow one person to move the 22 kg oven into place.

A 2.6 kW heating element draws current from a 230 V single-phase supply, the standard circuit in British commercial kitchens. The 550 mm width and depth fit on a standard worktop or under a wall shelf, while the 355 mm height leaves clearance above for extraction hoods. The 38 litre volume holds up to four half-size gastronorm trays or two full-size sheet pans.

Cleaning follows from the construction: wipe the stainless steel interior and exterior with a damp cloth and mild detergent, remove the wire shelves to wash separately, and check the door gasket for food debris that could break the seal. The fan and heating element are enclosed behind a panel that is not user-serviceable.
