A refrigerated buffet holder keeps prepared dishes chilled without power by storing cold in eutectic plates. These plates contain a phase-change material that freezes solid at low temperature. When the plates are frozen overnight, they absorb heat from the food placed above them, keeping it cold for hours without electricity or ice.

The operator loads the three aluminium eutectic plates into the base of the unit and freezes them overnight. In the morning the plates are transferred to the buffet holder, which is then placed on the counter. Dishes are arranged on the flat top surface, and the cold stored in the plates radiates upward, maintaining safe serving temperatures for up to six hours.

Built from black epoxy-painted steel, the unit has a flat work surface sized to hold standard gastronorm trays or individual serving dishes. Three rubber feet underneath prevent sliding on smooth worktops and protect the surface from scratches.

The Casselin S3 buffet holder measures 589 mm wide, 203 mm deep and 77 mm high, fitting neatly on counters or buffet lines without obstructing service flow. At 6.5 kg it is light enough to move between storage and service areas by hand, yet stable once placed.

Cleaning is straightforward: the top surface and the eutectic plates are wiped with a damp cloth and mild detergent after each service. The plates are removed and refrozen overnight to prepare for the next day's use.
