A refrigerated buffet holder keeps chilled food at safe serving temperatures without continuous power. Inside, an aluminium eutectic plate absorbs cold during pre-chilling. The plate is sized to hold enough thermal mass to offset the heat that enters through the insulated walls. When the unit is transferred to the buffet line, the plate slowly releases its stored cold, maintaining the temperature of the food placed above it. The method relies on latent heat exchange rather than a compressor, so it operates silently and without electricity once charged.
To use the Casselin M1, first pre-chill the unit in a refrigerator or cold room until the eutectic plate is fully frozen. Remove it, place the food on the flat top surface, and position the holder on the buffet counter. The food remains cold for up to six hours, depending on ambient temperature and how often the lid is opened. No settings or adjustments are needed during service; the plate continues to release cold until its thermal reserve is exhausted.
The construction is a square black epoxy-painted steel cabinet with a single aluminium eutectic plate mounted inside. Four rubber feet raise the unit slightly above the counter, preventing scratches and allowing air circulation underneath. The compact footprint of 321 mm by 321 mm fits neatly on most buffet tables or counters.
The 5 kg weight makes the unit easy to move by hand between the cold room and the service area. The 77 mm height keeps the food at a comfortable serving level without requiring additional stands or risers.
Cleaning is limited to the exterior surfaces and the top plate. Wipe the black epoxy steel with a damp cloth and mild detergent; avoid abrasives that could damage the finish. The aluminium eutectic plate should be cleaned with a soft cloth and non-corrosive cleaner to prevent pitting. After cleaning, return the unit to the refrigerator to recharge the cold reserve for the next service.
