A refrigerated buffet holder maintains chilled food at safe serving temperatures without electricity. It relies on a eutectic plate, a sealed container filled with a phase-change material that absorbs heat as it melts. Once frozen, the plate pulls warmth from the surrounding air and the food above it, keeping the contents chilled for hours. This passive cooling method eliminates the need for power during service, allowing the unit to be placed anywhere on a buffet line or counter without trailing cables or sockets.
To prepare the holder, the eutectic plate is frozen overnight in a standard freezer. The next day, the plate is slid into the base of the unit and the GN 1/1 gastronorm tray of chilled food is placed on top. The holder is then positioned on the buffet counter, where it will keep the food cold for up to six hours. No further intervention is required until the service period ends and the tray is removed.
The construction is black epoxy-painted steel, chosen for durability and resistance to chipping in busy kitchens. A single GN 1/1 eutectic plate is fitted as standard, matching the size of the tray it supports. Four rubber feet raise the unit slightly above the worktop, preventing scratches and allowing air to circulate underneath for more even cooling.
The footprint of 563 by 358 millimetres fits neatly on most buffet counters and worktops, while the low height of 74 millimetres keeps the food within easy reach of guests. The weight of 6.05 kilograms makes the unit light enough to move between storage and service positions without strain, yet stable enough to remain in place during use.
Cleaning is straightforward: the eutectic plate is removed and wiped down, while the steel body can be cleaned with a damp cloth and mild detergent. The rubber feet should be checked periodically for debris to ensure the unit sits level on the counter.
