An espresso grinder operates by passing coffee beans between two abrasive discs, known as grinding discs, which rotate at high speed. The size of the gap between these discs determines the fineness of the grind. For espresso, a fine and consistent grind is essential to achieve proper extraction.

To use the Mignon Casa, coffee beans are loaded into the bean hopper. The grinder is then activated, causing the grinding discs to spin.
