A control knob turns the selector shaft on a combi oven, translating the chef's setting into the chosen cooking programme. The shaft carries a series of cams or contacts that engage the heating elements, fan speed and steam injection in the correct sequence. Rotating the knob moves these contacts step by step, so the oven switches between baking, roasting, steaming or a combination without the operator having to programme each stage separately.

To use the knob, grip the outer rim and turn it clockwise until the pointer aligns with the desired setting on the panel. The detent inside the knob gives a positive click at each position, confirming the selection. Once the programme is complete, the knob can be returned to the off position or left at the last setting for the next cycle.

The knob is moulded in black plastic with a textured surface for grip. Its 50 mm diameter gives enough leverage to turn the shaft smoothly, even when the oven door is open and the operator's hands are occupied with trays or probes.

This replacement knob fits RATIONAL CM 101, CM 102, CM 201, CM 202, CM 61, CM 62 and CMP 101 models in all voltage and frequency variants listed by the manufacturer. It is a direct fit for the original part and requires no modification to the control panel.
