A bain marie trolley keeps prepared food at serving temperature without drying or overcooking. The ROCAM COMPASS 3 SEP uses heated water in three separate wells to surround gastronorm pans with gentle, even warmth. Water conducts heat more evenly than air, preventing hot spots and preserving texture. The water bath also adds humidity, which stops sauces from thickening and meats from losing moisture.
To use the trolley, fill each well with water up to the recommended level. Place the GN 1/1 pans into the wells, ensuring they sit securely. Set the analogue thermostats on the control panel to the desired temperature between +30 °C and +90 °C. The indicator lights show when the heating elements beneath the wells are active. Once the water reaches the set temperature, the bain marie maintains it steadily. The ergonomic control panel faces the operator, making adjustments simple during service. When not in use, the power cable can be hung on the built-in hook to keep the workspace tidy.
The trolley is constructed from AISI 304 stainless steel, chosen for its resistance to corrosion and ease of cleaning in a professional kitchen. The wells are moulded without sharp edges, reducing the risk of damage to pans or injury to staff. Double insulated walls improve energy efficiency by minimising heat loss. A drain cock on each well allows for quick water changes and thorough cleaning. The trolley stands on two silent polyamide castors with brakes and two fixed castors, making it easy to move between prep areas and service points. Non-marking corner bumpers protect walls and furniture from scuffs.
The control panel includes three independent analogue thermostats, each regulating the temperature of one well. The indicator lights confirm when the heating elements are active. The panel is removable, simplifying maintenance and repairs. A heat-proof push handle provides a safe grip when moving the trolley.
With a power rating of 2.25 kW, the trolley requires a dedicated 230 V circuit capable of handling the load. The temperature range of +30 °C to +90 °C covers most holding and proofing needs, from delicate sauces to hot mains. The 69 kg weight ensures stability while remaining manageable for two staff members to move. The footprint of 1303 mm long, 665 mm wide and 873 mm high fits standard kitchen layouts, with enough space for three GN 1/1 pans up to 20 cm deep.
Cleaning involves draining the wells via the cocks, wiping down the stainless steel surfaces with a non-abrasive cloth, and rinsing the wells to remove food debris. The removable control panel allows access to the heating elements for deeper cleaning. Regular descaling of the wells prevents mineral build-up from affecting performance.
Optional accessories include a full stainless steel dish holder for the short side, foldable tray slides in stainless steel tube or stainless steel, and a UK plug. Custom adhesive stickers can be added for branding or operational guidance.
The trolley is categorised under mobile bain maries in the ROCAM professional catering range.
