single-speed motor block + large production attachment
A vegetable cutter processes whole vegetables, fruits and firm produce by forcing them through sharp, precision-engineered discs or grids. The motor drives a horizontal blade assembly that slices, dices, juliennes or grates in a single pass, replacing repetitive manual work with a continuous flow of uniformly cut pieces. This method preserves cell structure, reducing liquid loss and bruising compared with chopping by hand or with a food processor that tears the tissue. The result is consistent texture for cooking, presentation and portion control, and faster preparation for high-volume service.
The operator loads the hopper with washed, trimmed produce, selects the appropriate disc or grid, and secures the lid. A single-speed motor starts at the press of a button, drawing the food down onto the rotating blade. The cut pieces fall into a waiting container beneath the outlet. Throughout the cycle the machine maintains a steady speed, ensuring every piece meets the same dimensions without jamming or overloading. When the batch is complete, the motor stops and the operator removes the lever and lid for cleaning.
The SAMMIC CA-41 is built in food-grade materials throughout, with a single-piece motor block and an electronic control board sealed against moisture. The inlet opening measures 286 cm², allowing large items such as cabbages or melons to be fed whole. A combination of safety interlocks prevents operation unless the head and cover are correctly fitted, and the power switch is protected against accidental activation.
The 0.55 kW motor runs on a 400 V three-phase supply, drawing a steady load suitable for commercial circuits. The footprint of 391 mm by 396 mm fits on a standard worktop or prep table, while the 652 mm height keeps the outlet within easy reach of a gastronorm container. At 24 kg the unit is light enough to move with a trolley but stable enough to remain in place during operation.
Cleaning is simplified by removable parts: the lever and lid lift away without tools, exposing the blade assembly for thorough washing. The watertight control panel can be wiped down with a damp cloth, and the smooth surfaces of the hopper and housing prevent food debris from adhering.
Over 70 cutting styles are available by combining the discs and grids supplied with the machine. Each accessory is designed for high-volume use and can be swapped in seconds to switch between julienne, brunoise, waffle cuts or fine grating.
The SAMMIC CA-41 is certified by NSF International for hygiene and food-contact safety, meeting the standards required in professional kitchens.
