A bean-to-cup coffee machine that prepares espresso, milk drinks and chocolate beverages at the touch of a screen, designed for self-service counters and staff-operated outlets. The Schaerer Soul 12 grinds fresh beans for each drink, heats and froths milk with steam, and mixes powdered ingredients without manual steps. The process begins with two independent grinders that feed ground coffee directly into the brew group, where hot water is forced through the puck under pressure. Milk is drawn from an internal or optional refrigerated tank, heated by a steam wand, and aerated to create microfoam. Powdered chocolate or alternative ingredients are dispensed from a separate hopper and blended with hot water or milk. The machine controls every stage—grinding time, water temperature, steam pressure and mixing speed—so that each drink matches the programmed recipe.
Operation starts on the 12.1″ colour touchscreen, which offers three modes. Guest mode guides occasional users through a sequence of choices for strength, size and milk ratio. Frequent-user mode stores shortcuts to favourite drinks, letting regular customers select and adjust them in a single tap. Staff mode presents pre-set recipes for quick service, reducing training time. After the drink is chosen, the machine grinds the beans, brews the espresso, heats and froths the milk, and combines the components in the cup. The entire cycle runs automatically, with no need to move the cup between stations.
The construction is a stainless-steel chassis that houses two bean hoppers, a powder hopper, a water boiler, a steam generator and the Best Foam milk system. The 12.1″ touchscreen is mounted at eye level for easy viewing. Optional accessories include a 10-litre refrigerated milk tank, a dry-mix hopper for chocolate or alternative powders, a steam tube for manual foaming, and a lockable door for the control panel and hoppers. The machine stands on adjustable legs that can be extended by 40 mm.
The voltage requirement of 230 V single-phase or 400 V three-phase determines the circuit the machine plugs into. A single-phase connection suits most small to medium outlets, while a three-phase supply allows higher power draw for faster recovery between drinks. The footprint of 582 mm wide by 576 mm deep fits on a standard worktop or under a low cupboard, leaving space for cups and accessories. The height of 762 mm allows staff to reach the hoppers and touchscreen without stooping.
Cleaning follows from the parts that are present. The brew group and steam wand require daily rinsing to remove coffee oils and milk residue. The drip tray and grounds container empty automatically into a collection bin, which needs regular removal. The optional descaling cartridge system simplifies maintenance by releasing cleaning agents at set intervals. The touchscreen can be wiped with a damp cloth, and the stainless-steel surfaces are cleaned with non-abrasive detergents.
The Soul 12 is available with optional accessories that expand its drink menu. The Twin Milk system adds a second milk circuit for dairy and non-dairy alternatives. The refrigerated milk tank keeps milk chilled for extended service. The dry-mix hopper allows chocolate or other powdered drinks to be added to the menu. A lockable door secures the control panel, hoppers and tanks against unauthorised access.
