A temperature probe measures the internal heat of food, liquids or oven cavities without opening doors or disturbing the cooking process. The PT1000 sensor changes its electrical resistance as the temperature rises or falls, sending a precise signal to the appliance's control system. This feedback loop allows the oven, combi-steamer or holding cabinet to adjust heating elements or steam injection automatically, maintaining the exact temperature set by the chef. Because the probe remains in contact with the product, it eliminates guesswork and ensures consistent results across batches, whether slow-roasting meats, proofing dough or holding sauces at serving temperature.
To use the probe, insert the stainless-steel tip into the thickest part of the food, avoiding bones or fat that can skew the reading. Connect the lead to the appliance's dedicated socket—no tools are required. Once the programme starts, the display will show the core temperature in real time, and the appliance will regulate its output to hit the target. When the set point is reached, an alert sounds, and the appliance can switch to holding mode or shut off entirely, preventing overcooking. The probe is removed after use and cleaned separately.
The PT1000 probe is constructed with a food-safe stainless-steel sheath that protects the sensitive element from moisture, grease and mechanical knocks. The lead is insulated to withstand the heat and humidity of a professional kitchen, ensuring reliable performance over repeated cycles. Compatible with GEV and PIRON appliances, it replaces original parts under article numbers L3440220 (PIRON) and LF3440220 or S5100246 (GEV).
This probe is listed in the catalogue under spare parts for ovens, combi-steamers and holding cabinets.
