A hot marmite maintains bulk dishes at serving temperature without drying or scorching. Heated water in a sealed well beneath the trays transfers gentle, even warmth through the metal bases, while the protective glass lid traps steam and lets staff monitor contents without lifting it. This method prevents hotspots and keeps sauces, stews and soups at a consistent temperature for hours, ready for plating or self-service.
The unit holds four GN1/1 gastronorm trays side by side. Trays are lowered into the heated well, the glass lid is closed, and the thermostat is set to the required holding temperature. Once the water reaches the set point, the element cycles on and off to maintain it. Staff can check fill levels and stir contents through the glass without opening the lid, reducing heat loss and steam escape.
Construction is stainless steel throughout, with a toughened glass lid that lifts clear for tray insertion and removal. The overall footprint is 1600 mm wide, 800 mm deep and 1310 mm high, giving a large capacity within a standard worktop height.
Cleaning follows from the materials: stainless steel surfaces wipe clean with a damp cloth, while the glass lid can be removed for thorough washing. The water well drains through a tap at the front, allowing fresh water to be added for each service period.
The model is designed for GN1/1 trays only, ensuring a secure fit and even heat transfer across the full tray base.
