Regeneration (reheating) cabinets are professional units designed for fast and high-quality reheating of previously prepared food, preserving its original taste, texture, and moisture. They are ideal for restaurants, hospitals, schools, and high-volume catering operations.
A reheating cabinet that restores plated meals to serving temperature without drying or overcooking uses a closed chamber where hot air and gentle steam circulate continuously. The fan draws air across a heating element, then directs it evenly across every shelf, while a small reservoir releases steam to keep humidity at the level that prevents moisture loss. This balance of dry heat and moisture preserves the original texture of sauces, meats and vegetables, so plated dishes emerge ready to serve rather than reheated from cold storage.
The operator loads up to five GN 1/1 gastronorm pans onto the wire shelves, closes the door, and sets the desired temperature on the analogic dial. A second knob adjusts the reheating time; once set, the unit runs unattended until the cycle completes. A pilot light indicates when the cabinet is active, and the internal fan stops automatically when the door is opened to prevent heat escaping into the kitchen.
The cabinet is constructed from stainless steel throughout, including the exterior panels, interior liner and wire shelves. The analogic control panel is mounted on the front, with a single temperature dial and a timer knob for straightforward operation. A mains isolator switch is positioned above the controls for safe power-down during cleaning.
A 6 kW power rating requires a three-phase, 380-415 V supply, the standard circuit in professional kitchens for high-demand appliances. The 710 × 770 × 600 mm footprint fits against a worktop or wall, occupying minimal floor space while accommodating five full-size gastronorm pans. The temperature range of 30-60 °C covers gentle reheating of plated meals and holding at serving temperature, but does not extend to cooking or baking.
Cleaning involves wiping the interior and shelves with a damp cloth after each use, and descaling the steam reservoir monthly to prevent mineral build-up. The stainless steel surfaces resist corrosion and can be sanitised with standard kitchen chemicals. The analogic controls require no calibration, and the mechanical timers and thermostats are designed for long-term reliability without digital maintenance.
The RRUA105EP is a single model with no variants. It is categorised under reheating and holding equipment in the Inoxtrend professional catering range.
