A cooling counter keeps prepared ingredients and plated dishes at safe holding temperatures without freezing them. The refrigeration unit circulates chilled air beneath the worktop and through insulated drawers, maintaining an even temperature across every shelf. This method prevents bacterial growth while preserving texture and flavour, making it essential for service areas where dishes wait to be served or ingredients are staged before final assembly. The operator loads the seven stainless steel drawers with trays or containers, sets the desired temperature between -5 °C and +8 °C, and closes the drawers. The unit runs continuously, monitored by an internal thermostat that cycles the compressor to hold the set point. When a drawer is opened, the cold air remains inside due to the insulation and the low front lip, so the temperature recovers quickly once the drawer is shut again. The counter is built from AISI 304 stainless steel, chosen for corrosion resistance and hygiene. The 1720 mm by 700 mm worktop provides ample space for plating or temporary storage, while the seven drawers organise ingredients by type or course. High-density insulation minimises energy use and prevents condensation on the outer surfaces. The single control adjusts the temperature within the stated range, allowing the unit to hold chilled desserts, salads, or pre-portioned proteins without freezing them. A 230 V supply connects to a standard single-phase circuit, suitable for most commercial kitchens. The 330 L volume distributes across seven drawers, each holding multiple gastronorm trays or loose containers. The 1720 mm length fits standard worktop runs, while the 900 mm height allows under-counter cupboard space or a clear view across the kitchen. The 0.293 kW power rating reflects the load on the refrigeration circuit, balancing cooling capacity with energy efficiency. After each service the brushed stainless steel top and drawer fronts can be wiped with a sanitising cloth to remove fingerprints and splashes without leaving streaks. The drawers slide out for thorough cleaning, and the front lip can be removed to access the insulation cavity if needed. No additional maintenance is required beyond routine checks of the door seals and compressor. The P313 is a single model with no variants. It is categorised under cooling counters in the Novameta professional refrigeration range.
