- : FM industrial
- Article number: F 408
A dough proofer creates the warm, humid environment yeast needs to rise. The FM Industrial F 408 circulates heated air around trays of shaped dough, maintaining a steady temperature that speeds fermentation without drying the surface. The controlled heat and airflow ensure even proofing across every tray, giving consistent volume and texture to bread, buns and pastries.
To use the F 408, the operator slides eight 480 × 340 mm trays into the guides, spacing them 80 mm apart. The door is closed, the temperature is set up to 85 °C, and the unit is switched on. The internal fan distributes the heated air evenly, so each tray receives the same conditions. Once the dough has risen to the required height, the trays are removed and transferred to the oven.
The cabinet is built from stainless steel, with an inner chamber measuring 490 × 560 × 650 mm. The outer dimensions are 640 mm wide, 640 mm deep and 975 mm high, allowing it to fit against a worktop or between existing equipment. A single-phase Schuko plug connects to a standard 230 V, 50 Hz circuit, drawing 0.7 kW when running. The 43 kg weight means it can be moved with a sack trolley but is stable once in place.
The 85 °C upper limit covers all standard proofing temperatures, from delicate croissants to robust sourdough. The 0.7 kW power rating keeps the electrical load low, so the unit can share a circuit with other small appliances. The 8-tray capacity lets a bakery proof multiple batches at once, while the 80 mm spacing between trays accommodates taller items like baguettes or pan loaves.
Cleaning involves wiping the interior with a damp cloth after each use to remove flour dust and condensation. The trays are removed and washed separately. The fan and heating element are protected by a grille, which should be checked periodically for blockages.
The F 408 is listed in the professional bakery equipment section of the catalogue, under dough preparation.
