FM Proofers

FM Proofers – professional dough proofing equipment from FM Industrial, designed for bakeries, patisseries, pizzerias and other HoReCa businesses where dough must be proofed under controlled conditions before baking. The proofer ensures precise temperature and humidity control so that yeast bacteria can work actively and the dough rises evenly – this is a prerequisite for obtaining high-quality bread, croissants, patisserie products and pizza dough. BHS offers FM Industrial proofers to professional catering businesses across Europe.

BHS supplies FM proofers to bakeries, patisseries, restaurants with a bread oven and food production businesses. Proper proofing conditions directly affect the volume, crust, flavour and consistency of the finished product – which is why professional bakers use specialised proofers instead of relying on room temperature. The BHS range also includes FM Industrial Electric Convection Ovens and FM Industrial Gas Convection Ovens as the ideal complement to the proofing process.

Dough proofing is one of the most important stages in the production of bread and patisserie products – insufficient or incorrectly performed proofing results in a dense, dry and flavourless end product. A professional FM Industrial proofer provides a controlled environment with precise temperature and humidity, allowing yeast cultures to work optimally.

How a proofer works

An FM Industrial proofer is a special cabinet-type or chamber-type appliance that maintains a precise temperature, usually in the 24–38°C range, and high humidity at 70–85%. These conditions are optimal for yeast bacteria in the dough – they actively produce carbon dioxide, which makes the dough fluffy and increases its volume. The proofer can work with a single batch of dough or with multiple tray loads simultaneously, depending on the model’s capacity. Many FM Industrial models feature programmable proofing cycles, allowing precise temperature and humidity schedules to be set for different products. Proofing time depends on the recipe – from 30 minutes for quick products to several hours or even overnight proofing for special sourdough or sourdough bread recipes.

Which products require a proofer

A proofer is an essential piece of equipment for bakeries producing any type of yeast dough products – wheat bread, wholemeal bread, baguettes, croissants, butter buns, pies and other products. In patisseries, proofers are used for yeast-based patisserie products – cinnamon rolls, Danish pastries and yeast cakes. In pizzerias, the proofer ensures slow cold fermentation of pizza dough for 24–72 hours, which gives an authentic Neapolitan pizza flavour and texture. In restaurant kitchens with their own bread baking, the proofer allows fresh bread to be prepared for each service. BHS helps select the appropriate FM Industrial proofer model based on production volume and product range.

HACCP and hygiene in proofing

The proofing process takes place in a warm and humid environment, which is ideal not only for yeast but also potentially for unwanted bacteria, so proofer hygiene is a HACCP critical control point. The proofer must be easy to clean – with stainless steel interior walls, removable shelves and a fully washable interior. Temperature and humidity monitoring and recording are a HACCP requirement – FM Industrial proofers with digital control allow proofing parameters to be tracked in real time. Regular cleaning and disinfection of the proofer, as well as washing of trays and shelves, are mandatory procedures to avoid contamination. Dough in the proofer must not come into contact with refrigeration equipment or finished products – cross-contamination prevention requirements must be observed.

HoReCa usage scenarios

In bakeries, the FM Industrial proofer works in tandem with convection or pastry ovens – dough is proofed under controlled conditions and then goes directly into the oven. In patisseries, croissant and Danish pastry dough requires precise temperature control during proofing to prevent the butter layers from melting before baking. In hotel restaurants, baking fresh bread for each service requires prior proofing – the proofer allows this to be planned precisely. In pizzerias with an authentic Neapolitan concept, cold proofing over a long period is an integral part of the recipe. Also check out accessories for FM Industrial ovens – trays and trolleys compatible with proofers. BHS helps catering businesses create a complete bread production equipment set.

Frequently asked questions

What is the difference between a proofer and a regular refrigerator with temperature control? A proofer provides not only temperature control but also high humidity at 70–85% – this prevents the dough surface from drying out during proofing. A regular refrigerator maintains low humidity, which is not suitable for dough proofing. FM Industrial proofers are designed specifically for this purpose with a humidity injection system.

Can one proofer work for different products with different recipes? Yes, programmable FM Industrial proofers allow different temperature and humidity profiles to be set and saved in memory. This allows the same appliance to proof bread dough, croissant filling and pizza dough using different cycles. Consult BHS specialists about the programming options for a specific model.
