Standard equipment: spiral, blade, whisk
A planetary mixer combines a rotating bowl with a beater that travels around its own axis, mimicking the motion of a planet orbiting the sun. This dual movement ensures every part of the mixture is reached, folding, stretching and aerating dough, batter or cream evenly without manual intervention. The method eliminates dead spots where ingredients might remain unmixed, delivering consistent texture whether preparing bread, meringue or cake batter.
To operate the SIGMA BM40, the operator lowers the motorised bowl into position, attaches the chosen tool—spiral for dough, blade for pastry or whisk for cream—and selects one of seven speeds. The belt speed variator adjusts the beater's rotation from slow folding to rapid whipping, while the bowl remains stationary. Once mixing is complete, the bowl lifts automatically, allowing the operator to remove the tool and transfer the mixture without strain.
The construction centres on a 40 L stainless steel bowl measuring 400 mm across and 370 mm deep, supported by a sturdy frame of welded steel. A removable stainless steel safety guard encloses the bowl during operation, preventing accidental contact with moving parts. The mixer stands on four adjustable feet, ensuring stability on uneven worktops.
Controls are limited to a single speed selector and a bowl-lift switch. The selector offers seven preset speeds, while the lift switch raises or lowers the bowl between two positions—40 mm for loading and 80 mm for mixing—without manual effort.
The 1.6 kW motor draws a three-phase 400 V supply, typical of commercial kitchens with high-demand equipment. A 40 L capacity allows batches large enough for medium-scale production, while the 204 kg weight requires a fixed position on the floor rather than a portable worktop. The footprint of 700 mm by 910 mm fits within standard kitchen layouts, leaving space for adjacent prep areas.
Cleaning involves removing the bowl and tools, wiping the stainless steel surfaces with a damp cloth, and rinsing the guard under a tap. The belt speed variator requires no maintenance beyond occasional inspection for wear, and the motorised lift mechanism operates without lubrication.
The SIGMA BM40 is supplied with a spiral, blade and whisk as standard. EAC certifications confirm compliance with safety and performance standards for commercial use.
This mixer is categorised under heavy-duty bakery and pastry equipment in the SIGMA professional range.
