Standard equipment: spiral, blade, whisk
A planetary mixer combines a fixed bowl with an offset mixing tool that rotates on its own axis while orbiting the bowl. This dual motion pulls ingredients from the sides to the centre, folding and stretching them evenly without dead spots. The method is designed for doughs, batters and creams that need thorough aeration or gluten development, giving consistent texture across large batches.
The SIGMA BM30 starts with the operator lowering the motorised bowl into position. A safety guard of stainless steel swings into place, locking the bowl before the motor can run. The operator selects one of seven speeds via a belt variator; the lowest setting gently folds fragile mixtures, while the highest whips cream or aerates sponge batters. The spiral hook, flat blade or balloon whisk is fitted to the planetary head, then the head is lowered until the tool reaches the correct depth. Once the timer is set, the mixer runs unattended until the cycle ends, at which point the bowl is raised and the guard opened for unloading.
Construction centres on a stainless-steel bowl measuring 350 mm across and 365 mm deep, mounted on a motorised lift that raises and lowers it between mixing and loading positions. The safety guard is also stainless steel and hinges clear for access. A 1.1 kW motor drives the planetary head through a seven-speed belt variator, giving a range of mixing intensities without changing gears. The mixer stands on four adjustable feet, bringing the overall height to 1180 mm from a footprint of 605 mm by 735 mm.
Controls consist of a speed selector dial marked with seven positions, a start/stop button and a bowl-lift switch. The dial adjusts the belt variator to set the mixing speed, while the lift switch raises or lowers the bowl electrically, removing the need to lift 30 litres of dough by hand.
A 30 litre volume allows batches large enough for a full service without refilling, while the 104 kg weight keeps the mixer stable on the worktop during high-speed mixing. The 400 V three-phase supply matches the circuit used by most professional kitchens, avoiding the need for a separate transformer. The 1.1 kW power rating indicates the load the mixer places on the circuit, which is typical for equipment of this size and avoids tripping breakers during peak demand.
Cleaning follows from the removable parts: the bowl, guard, spiral, blade and whisk lift off for washing in a sink or dishwasher. The planetary head and variator are wiped down with a damp cloth, avoiding water ingress into the motor housing. The stainless-steel surfaces resist corrosion and can be sanitised with standard kitchen chemicals.
The BM30 is supplied with a spiral hook, flat blade and balloon whisk as standard. The EAC certification confirms compliance with Eurasian safety standards, allowing use in commercial kitchens across the region.
In the catalogue, the SIGMA BM30 is listed under planetary mixers, alongside other capacities and configurations for professional bakeries and catering kitchens.
