Removable safety guard in stainless steel
A planetary mixer combines a rotating bowl with an offset beater that travels its own circular path. The beater sweeps every part of the bowl, folding and stretching the mixture without leaving pockets of unmixed material. This motion suits doughs, batters and creams that need even aeration or gluten development, and it handles volumes that would stall a hand whisk or a fixed-arm mixer.
The SIGMA BM10 follows this principle with a 10 litre stainless steel bowl. The operator lowers the bowl into position with a motorised lift, selects one of seven speeds on the belt variator, and attaches the required tool: spiral for bread dough, blade for pastry, or whisk for meringues and batters. A removable stainless steel guard covers the bowl during operation, preventing splashes and meeting safety requirements.
The sequence begins with the bowl raised. The chosen attachment is locked onto the beater shaft, the guard is fitted, and the ingredients are loaded. The bowl is lowered, the speed is set, and the mixer starts. The beater orbits the bowl while the bowl itself turns, ensuring continuous contact. When mixing is complete, the bowl is raised, the guard removed, and the attachment changed or cleaned.
Construction is in stainless steel and painted metal, with a belt-driven speed variator that allows fine control between 10 and 40 rpm. The motorised lift moves the bowl smoothly between its two positions, reducing manual handling. The 0.55 kW motor draws power from a 400 V three-phase supply, suitable for a dedicated circuit in a commercial kitchen.
The seven speeds open a range of processes: slow for kneading, medium for creaming, and fast for whipping. The 10 litre capacity sets the batch size, while the 64 kg weight means the unit stays stable on the worktop without bolting. The footprint of 560 mm by 600 mm fits a standard work surface, leaving space for ingredient trays and utensils.
Cleaning follows from the removable parts: the bowl, guard, spiral, blade and whisk detach for washing. The belt variator and motorised lift require no daily maintenance beyond checking for loose fixings. The stainless steel surfaces wipe clean with a damp cloth.
