60 l planetary mixer suitable for kneading any dough as well as for beating egg whites, cream, sponge batters, etc.
A planetary mixer uses a stationary bowl paired with a beater that rotates on its own axis while circling the bowl. This dual movement ensures even mixing, allowing dough to develop gluten consistently and batters to incorporate air for lighter textures in sponges or whipped cream.
The operator secures the bowl to the base and selects the appropriate attachment: a spiral hook for bread dough, a flat beater for cake mixtures, or a wire whisk for egg whites. Once the cover is in place, the inverter-controlled motor starts at the chosen speed. The gearbox, immersed in oil, maintains steady torque whether handling stiff dough or delicate meringue. A safety mechanism halts the motor if the bowl or cover is not properly detected.
Controls feature a keypad capable of storing up to 100 programmes, each with five phases for timed mixing, speed adjustments, and pauses. Users can retrieve saved sequences or create new ones directly on the panel.
The 2.2 kW motor operates on a three-phase 400 V supply, standard in professional bakery settings. The 60 litre bowl accommodates large batches of bread or sponge, while the unit's shipping weight of 277 kg and operating weight of 313 kg necessitate a fixed worktop or robust trolley. The mixer's footprint measures 82x112 x H-172, fitting typical bakery benches.
The construction includes a cast-iron gear housing to minimise vibration and a steel crown-and-pinion drive for reliable power transmission. The standard model features painted surfaces, with a stainless steel version available for environments requiring corrosion resistance.
Maintenance involves removing the bowl and attachments, cleaning the beater shaft, and lubricating the planetary gear after prolonged use. The oil-bath transmission requires an annual oil change to ensure smooth performance.
