This planetary mixer features a fixed bowl paired with a beater that rotates on its own axis while moving around the bowl.
The 40-litre bowl, made of stainless steel, locks securely onto the base. Operators choose from a hook, whisk, or paddle, adjusting speed via an inverter-driven motor. This allows gradual starts for incorporating ingredients and faster speeds for gluten development or whipping. Safety mechanisms prevent operation unless the bowl and its cover are properly positioned. Once mixing finishes, the bowl tilts forward, simplifying tool removal and bowl extraction.
Power transmission relies on a gearbox immersed in oil, featuring steel gears within an anodised aluminium casing. A painted steel cover shields the mechanism from debris and splashes. An optional electronic keypad can store up to 100 programmes, each with five customisable phases for speed, time, and pauses, ensuring consistent replication of recipes.
The 1.5 kW motor operates on a 400 V three-phase supply, suitable for professional kitchen environments. The mixer measures 82 cm by 112 cm, fitting standard work surfaces, with a height of 172 cm to avoid overhead obstructions. Weighing 183 kg for shipping and 220 kg in operation, it requires a stable installation or a robust trolley with brakes.
Maintenance involves cleaning the stainless-steel bowl and attachments in a pot-wash, wiping the painted cover with a damp cloth, and occasionally dusting the sealed gear housing. A fully stainless-steel model is available upon request.
