Copper bristle brush
A pizza oven brush clears ash, carbon and food residue from the oven floor and walls without damaging the refractory surface. Copper bristles are softer than steel, so they sweep away debris while protecting the oven's heat-retaining material. The bristles flex to follow the curves of domed or vaulted ovens, reaching into corners and along seams where ash collects. A long handle keeps the operator's hands clear of the hot zone, reducing the need to wait for the oven to cool before cleaning.
The operator slides the brush across the oven floor, using short overlapping strokes to lift ash into a dustpan or onto a shovel. For stubborn deposits, the steel scraper at the opposite end of the handle chips away baked-on residue without scratching the oven surface. The brush is held horizontally for sweeping and flipped vertically to use the scraper, so the same tool tackles both loose and hardened debris in a single pass.
The handle is made of aluminium, which is light enough to manoeuvre for extended periods yet strong enough to transmit the pressure needed for scraping. Copper bristles are fixed directly to the head, and the steel scraper is riveted to the opposite end, so there are no loose parts that could detach inside the oven. The 1320 mm length is chosen to reach the back wall of most professional pizza ovens without requiring the operator to step inside.
Cleaning is straightforward: after each service the brush is shaken to remove loose ash, then washed under a tap with a mild detergent to dissolve grease. The copper bristles are resistant to corrosion, so they do not rust when stored wet, but they should be dried before the next use to prevent verdigris from forming. The steel scraper can be honed with a file if its edge becomes blunt, and the aluminium handle can be wiped with a damp cloth to remove soot.
This brush is listed in the HENDI catalogue under Oven Accessories, where it is grouped with tools for refractory ovens and wood-fired equipment.
