Japanese style multi level charcoal grill.
A charcoal grill built for high-heat searing and authentic Japanese grilling techniques, the KOPA R90ST draws heat from a deep bed of natural charcoal. The fire's radiant energy cooks food directly above, while the rising hot air carries smoke and aroma through the grates. This method gives meats, fish and vegetables a crisp exterior and juicy interior without the need for added fats or oils.
The grill is organised in two tiers: a lower grill positioned closer to the charcoal for intense, fast searing, and an upper grill set further away for slower, more even cooking. The operator loads charcoal into the firebox, lights it and allows the coals to reach the desired glow. Food is placed on either grill level, and the exhaust hood draws smoke and heat upwards at 2000 m³ per hour, keeping the workspace clear and the temperature steady. Once cooking is complete, the grates are removed for cleaning and the ash is emptied from the firebox.
The unit is constructed from heavy-gauge steel, giving it a total weight of 289 kg that keeps it stable on the floor. The main body measures 1340 mm wide, 830 mm deep and 1250 mm high, providing space for the dual grill levels: the lower grill spans 670 mm by 350 mm, while the upper grill measures 780 mm by 240 mm. An average charcoal consumption of 10 to 12 kg per service supports extended grilling sessions without frequent refuelling.
The exhaust rate of 2000 m³ per hour ensures rapid removal of smoke and heat, reducing the need for additional ventilation in the kitchen. The weight and footprint require a dedicated floor space, while the dual grill configuration allows simultaneous cooking of different items at varying intensities.
Cleaning involves removing the grates, brushing off ash and wiping down the interior surfaces. The firebox is emptied after each use to prevent build-up and maintain airflow. No additional maintenance is specified beyond standard grill care.
The R90ST is positioned in the KOPA catalogue under Japanese-style charcoal grills for professional catering.
