Japanese style multi level charcoal grill.
A Japanese charcoal grill uses radiant heat from burning charcoal to sear and cook food directly above the fuel bed. The charcoal is arranged in a bed beneath the grills, and the heat rises through the grates to cook meat, fish or vegetables. The method gives food a distinct smoky flavour and a crisp exterior while keeping the interior moist. The grill's open design allows the operator to adjust the heat by moving the food closer to or farther from the charcoal, or by controlling the airflow with vents or an exhaust system.
The KOPA R90S is built for professional use with two grill surfaces: a larger lower grill and a smaller upper grill. The operator loads charcoal into the firebox, lights it, and waits until the coals are glowing and covered with white ash. Food is placed on either grill, and the exhaust system draws smoke and heat upwards, keeping the cooking area clear. The operator monitors the food, turning or moving it as needed to achieve even cooking and the desired level of char.
The grill is constructed from heavy-gauge steel, giving it the weight and stability needed for commercial kitchens. The dual grill configuration allows two different foods to be cooked simultaneously at different heat levels. The lower grill sits closer to the charcoal, providing higher heat, while the upper grill offers a gentler cooking temperature.
Controls on the R90S include an adjustable exhaust system, which regulates airflow and smoke extraction. The exhaust rate of 2000 cubic metres per hour ensures that smoke is quickly removed from the kitchen, maintaining a comfortable working environment.
The grill's dimensions of 980 mm wide, 686 mm deep and 1250 mm high give it a substantial footprint, requiring a dedicated space in the kitchen. The weight of 276 kg means the unit is moved with a pallet truck or similar equipment. The average charcoal consumption of 10-12 kg per service indicates the grill is designed for extended use, suitable for busy service periods.
Cleaning involves removing ash from the firebox after each use and brushing down the grill surfaces to remove food debris. The heavy steel construction requires periodic checks for rust or wear, particularly around the firebox and exhaust system.
The R90S is positioned in the KOPA catalogue as a specialist grill for Japanese-style cooking, offering the high heat and smoky flavour associated with yakitori, robata and other charcoal-grilled dishes.
