Japanese style multi level charcoal grill.
A drop-in charcoal grill built for authentic Japanese-style grilling, the KOPA R90D brings intense, smoky heat directly to the worktop. Charcoal burns at high temperatures, radiating heat upward through cast-iron grates to sear and caramelise food without the interference of a flame. The open design allows smoke to rise naturally, infusing dishes with a distinctive charcoal aroma while the exhaust system draws away excess fumes, keeping the kitchen atmosphere clear.
The grill operates with two independent levels: a lower grill for larger cuts or whole fish, and an upper grill for smaller items or finishing touches. Charcoal is loaded into a firebox beneath the grates, where it burns steadily, providing consistent heat across the cooking surface. The operator adjusts the heat by controlling the airflow and the quantity of charcoal, allowing precise temperature management without electronic controls. Once lit, the grill reaches working temperature quickly, and the dual grates enable simultaneous cooking of different items at varying intensities.
The sequence of use begins with loading the firebox with charcoal, which is then ignited and allowed to burn until glowing embers form. Food is placed on the grates, where it cooks through direct radiant heat. The operator monitors the charcoal level, adding more as needed to maintain the desired temperature. After cooking, the grates are removed for cleaning, and the ash is cleared from the firebox.
Constructed from heavy-gauge steel, the R90D is built to withstand the high temperatures of charcoal grilling. The grates are cast iron, retaining heat and distributing it evenly across the cooking surface. The unit's 900 mm width provides ample space for multiple dishes, while its 192 kg weight ensures stability when installed in a worktop.
The exhaust system, rated at 2000 m³/h, removes smoke and fumes efficiently, preventing them from accumulating in the kitchen. This airflow also helps regulate the grill's temperature, as oxygen feeds the charcoal fire. The average charcoal consumption of 10-12 kg per service indicates the grill's capacity for sustained use, making it suitable for high-volume cooking.
The grill's footprint of 900 x 590 mm requires a dedicated space in the worktop, while its 693 mm height allows for comfortable operation. The lower grill measures 675 x 355 mm, offering a broad surface for larger items, while the upper grill at 780 x 240 mm provides a narrower, secondary cooking area.
Cleaning involves removing the grates and scraping away ash and food residue. The cast-iron grates require seasoning after cleaning to maintain their non-stick properties and prevent rust. The firebox should be emptied of ash regularly to ensure proper airflow and heat distribution.
Designed for drop-in installation, the R90D integrates seamlessly into a worktop, making it a permanent fixture in professional kitchens. Its Japanese-style design prioritises direct heat and smoke for authentic flavour, distinguishing it from gas or electric grills.
This model is categorised under professional charcoal grills, positioned for commercial kitchens specialising in Japanese cuisine or open-flame cooking.
